Description

For the Spice Rub:

½ tsp ground cumin

½ tsp ground coriander

½ tsp smoked paprika

¼ tsp ground turmeric

¼ tsp cayenne pepper

¼ tsp ground cinnamon

⅛ tsp ground cloves

¼ tsp garlic powder

¼ tsp onion powder

½ tsp kosher salt, or to taste

¼ tsp ground pepper, or to taste

For the Beef Shawarma:

1 lb beef steak (flank or sirloin), about ½ inch thick

1 tbsp olive oil

For the Bowls (Optional):

Cooked basmati rice

Diced cucumber

Chopped tomatoes

Thinly sliced red onion

Pickles

Freshly chopped parsley

Yogurt or garlic sauce

Pita bread


Instructions

1. In a small bowl, combine all the spice rub ingredients (cumin, coriander, paprika, turmeric, cayenne, cinnamon, cloves, garlic powder, onion powder, salt, and pepper) and mix well.

2. Place the beef steak in a shallow dish and sprinkle generously with the seasoning mix. Drizzle with 1 tbsp of olive oil.

3. Using your hands, rub the spice and oil mixture evenly on all sides of the meat. Cover and let it marinate for at least 15-30 minutes at room temperature.

4. Heat an outdoor grill or a large skillet (preferably cast-iron) over medium-high heat. Lightly brush the grill or pan with oil.

5. Add the marinated steak and cook for 2-4 minutes per side, depending on thickness and desired doneness.

6. Remove the steak from the heat and let it rest on a cutting board for 5-10 minutes before slicing thinly against the grain.

7. To assemble the shawarma bowls, add a base of cooked basmati rice to each bowl. Top with fresh vegetables, pickles, and the sliced shawarma steak. Garnish with freshly chopped parsley and serve immediately with a drizzle of yogurt sauce and warm pita bread on the side.

Notes

Beef Cut: Flank steak or sirloin works best for this recipe.

Marinating: For even more flavor, you can marinate the beef for up to 4 hours in the refrigerator. Let it sit at room temperature for 30 minutes before cooking.

Serving: These bowls are highly customizable! Add other toppings like feta cheese, olives, or a scoop of hummus.
